Our philosophy
Coffee begins at the farm.
Variety, soil, climate, harvest and processing shape a coffee long before it reaches the roastery. We look for coffees with a clear character, then roast them with as little interference as possible.
What we want in the cup is the coffee itself — its acidity, sweetness, texture and sense of place.
The roast
We roast light, with clarity in mind.
Every coffee is approached individually. Each profile is developed to preserve the structure, sweetness and acidity already present in the coffee rather than cover them with roast flavour.
Some coffees are floral and delicate. Others are structured, sweet and deep. The roast should make those differences easier to taste.
Before the cup
A cup begins long before it is brewed.
It begins with the people who grow the coffee, the decisions made at harvest, and the care taken through processing and drying.
Just as great wine reflects the work behind it and earns its value, we believe exceptional coffee should be valued in the same way.
Good roasting cannot create quality that was never there. It can only respect what came before.
Our roastery
We select and roast our coffees at our roastery in Icheon.
Each coffee is roasted in small batches and prepared for online customers as well as retail and hospitality partners.
Our focus remains the same throughout: clarity, consistency and a clear expression of the coffee itself.
What we love
Coffee, food and wine.
Our sense of taste was not built by coffee alone. The things we cook, drink and return to continue to shape the way we think about flavour.
Balance, structure and a clear sense of origin are qualities we look for both in the cup and at the table.
